Step 1
Finest Ingredients
Our journey begins with selecting only the finest ingredients. We source the highest quality flour from the Midwest, mix it with that New York water that makes every loaf that much more delicious, ensuring freshness and quality in every loaf.
Step 2
Meticulous Mixing
Our experienced bakers expertly combine flour, water and our 50 year old biga starter, using precise measurements and techniques passed down through the years. This step is crucial in developing the perfect texture and flavor in our bread as well as our industry standard rolls, heros, and table breads.
Step 3
Hand Rolling
Each batch of dough is carefully scaled and hand-rolled by our skilled artisans. This hands-on approach allows us to shape each individual item with attention to detail, ensuring consistency and excellence in every bite.
Step 4
Artisan Baking
Once shaped, our hand-rolled products enter our European ovens, where our old world sourdough comes to life with our slow baked to perfection loaves. Our bakers monitor every batch, adjusting temperature and timing to achieve the our rich color and airy crumb interior.
Step 5
Finished Products
Finally our bread, rolls and sourdough and hard-crusted table breads are cooled, packed and sent off in one of our many routes to be enjoyed as far as the Hudson Valley, New Jersey, Connecticut and Lower Manhattan.Become a Customer
